Caprese Chicken Pasta

Now that I am home and getting things back in order I can post the recipe that we made on our vacation.  The kitchen in the condo we stayed in was not was small and did not have a lot of cookware to work with.  We came up with this recipe using things we had in the fridge and it turned out great. It was the perfect dish for a hot, summer night. Light and tasty.

We used fresh tomatoes..

along with basil, garlic, lemon, onion and shallots…

And you can’t forget the most important part…the buffalo mozzarella cheese. Yum!

Aside from the horrible kitchen situation we also were dealing with a crabby one year old who realized that the condo was not baby proofed. He was into everything!! It made for a challenging time trying to get this meal put on the table. But from the look on this face (or how he is stuffing his face) you can tell that it was worth it for everyone.

Prep time 10 minutes

Cook time 20 minutes

Ingredients for Marinade for chicken

¼ cup olive oil

Juice of 1 lemon

½ teaspoon oregano

½ teaspoon thyme

½ teaspoon parsley

½ teaspoon basil

Salt to taste

Remaining ingredients

5 cloves of garlic, minced

¼ of a sweet white onion, chopped

3 medium tomatoes, diced

One bunch of fresh basil leaves (about 15 fresh basil leaves), chopped

½ package of whole wheat angel hair pasta

1 small shallot, chopped

½ of an 8oz package of buffalo mozzarella, diced

2 chicken breasts, cooked and chopped

Juice of 1 lemon

Salt to taste


  1. Chop onion, shallot and mince the garlic and place in bowl.
  2. Dice the tomatoes, chop the buffalo mozzarella and basil and place in separate bowl.
  3. Create marinade from above and set in separate bowl. Chop chicken and place in bowl with marinade.


  1. Place pot of water on stove and bring to boil for pasta.
  2. In skillet on warm heat sauté onion, garlic and shallots until soft.
  3. Add chicken and marinade to skillet with onion, garlic and shallots and start to cook until chicken is cooked through.
  4. Place pasta in boiling water and cook until al dente.
  5. In mixing bowl combine chicken, onion, shallots and garlic with tomatoes, basil, buffalo mozzarella and pasta.  Drizzle olive oil over entire bowl.
  6. Place mixture from bowl into pasta pan on low heat and stir until buffalo mozzarella melts.
  7. Remove from heat and return to mixing bowl. Add juice of one lemon and salt to taste.
  8. Stir and serve with warm Italian bread and maybe your favorite glass of wine 🙂
